Chef Todd Lough
Bringing a vast knowledge of the hospitality and restaurant industries to the table, Chef Todd Lough joined the Pelican Grand team in April 2012. During his time at Ocean2000, he has revamped the menu to be regionally and seasonally motivated with fresh local ingredients, an honest approach to preparation and Latin influence. Chef Lough’s interest in fresh, seasonal ingredients began over thirty-five years before his appointment as Executive Chef at Ocean2000. He recalls helping his grandmother and aunt harvest produce in their own garden and then creating fresh, seasonal dishes right at home. This philosophy of cooking has stuck with him throughout his personal life and career – creating his niche of serving fresh, local, organic cuisine. Chef Lough is known for creating fresh, innovative and local New American Fusion cuisine. The imaginative offerings pay homage to the local foodways, devoting itself to the fine combination of great mixology, good times and superior cuisine.
