ETARU In Hallandale Beach Features Contemporary Japanese Dishes In A Beachside Setting
A plate of razor-thin sliced yellowtail hamachi comes out of the kitchen arranged on a plate in a symmetrical pattern. In the center lies a small bunch of mizuna, pickled vegetables and yuzu truffle dressing, the perfect accompaniments to the sashimi. What soon follows are more tantalizing bites. Paired with a beautiful oceanfront setting behind, pick up a pair of chopsticks, and dig in.
ETARU(a play on the word “eteru,” which roughly translates from Japanese to mean “Ether,” the fifth element) is Hyde Resort & Residences’ new restaurant on property in Hallandale Beach.
Located on the second floor, the space features both indoor and al fresco seating. The ocean breeze cools off the outside terrace decorated with comfy beach chic furniture overlooking the water, while the inside’s cozier atmosphere hosts the restaurant’s main feature: the Robata Grill. It’s a concept with origins stemming from the fishermen of Japan’s northern coast who would charcoal-grill fish on their boats and share with one another via outstretched oars.
“The Robata Grill is the beating heart of the restaurant where guests can watch as the chefs prepare their meals to perfection,” says group executive chef Hamish Brown. “Guests can enjoy robatayaki cuisine along with the other contemporary Japanese dishes from the kitchen in a beautiful beachside setting—it’s a match made in heaven.”
The restaurant features small plates, perfect for a shared-dining experience. Raw bar lovers will enjoy an array of sashimi, tokusen, maki rolls and salads and tataki. There are tiger prawns with an intricately wrapped tempura layer served with a suzu shichimi dipping sauce, each plate more beautiful than the next.
As for what to order from the Robata Grill, easy to eat slices of sweet corn with wasabi lime butter and shichimi are a great choice, along with scallops with yuzu mayo, or the prime beef filet served with eryngii mushrooms and a wasabi ponzu sauce, or the spicy tobanjan-glazed pork ribs, plus an array of other veggies, meats and seafood.
ETARU’s desserts are just as tempting. The larger-than-life dessert platter will arrive with a colorful assortment of sorbets, seasonal and exotic fruits, plus a dark chocolate and green tea pudding, crunch jivara and pear ice cream. The most fun will be the lemon and Key lime-iced popsicle that guests can dip in crushed coconut.
For those who can’t get enough of ETARU, a second location is set to open inside The Related Group’s ultra-luxury rental, Icon Las Olas in Fort Lauderdale, early next year.
